The ingredient, understood · Kitchen guide
Split. Scrape.
Make the most of a pod.
The tiny seeds bring the familiar speckled appearance. The pod itself can also flavour an infusion. Choose the method that suits your recipe.

About five minutes
Four small moves.
You need a clean board, a small paring knife and a spoon. Start with food-grade cured vanilla in sound condition.
- 01
Steady the pod
Use a clean, dry board. Lay the cured pod flat and hold it steady with your fingertips clear of the cutting path. A supple whole pod is easiest to work with.
- 02
Split lengthways
With the point of a small sharp knife, make a shallow slit along the length. Open the two sides gently; you do not need to cut right through the board-facing skin.
- 03
Scrape out the seeds
Run the back of the knife or a small spoon along the opened pod. Lift the dark seed pulp into your bowl. Scraped seeds from one pod are not the same thing as a commercial caviar product with a specified composition.
- 04
Use the pod as well
For custards and drinks, infuse the seeds and empty pod in the warm milk or cream, following the recipe. Remove the fibrous pod before serving. For a dough, mix the scraped seeds into the liquid or sugar before combining.
Use it where it matters
Match the method
to the recipe.
Dough & cheesecake — Scrape the seeds and distribute them through the wet ingredients or sugar. Try the brioche or Basque cheesecake.
Milk & cream — Infuse both seeds and pod, then remove the pod. Try the baked custard, ganache or vanilla matcha latte.
Home extraction — Use fresh, unused food-grade pods or a suitable extraction input. Follow the home extract guide rather than adding wet, dairy-used pods to a long-storage jar.
Keep the ingredient useful
Store the rest
with care.
Keep unused pods sealed according to the supplier’s storage guidance. Re-close opened packs and protect them from heat and light.
A pod already used in dairy is a used food ingredient, not a fresh pod for a pantry project. Do not put it into sugar for long storage.
Choose by industry
Pods, caviar, powder and extraction inputs have different roles. Start with your formulation and the offered lot specification.
