Vanilla brioche
A golden loaf, a tender crumb, and whole-pod vanilla folded into the dough. Make time for the rise.
Recipe 05 · A modern café ritual
Freshly whisked matcha meets chilled vanilla-infused milk. A gentle sweetness and green tea finish, without a bottled vanilla syrup.
Recipe draft · Kitchen validation pending

Step by step
Split the pod and scrape the seeds. Warm the milk, sugar, seeds and pod until steaming. Remove from the heat, cover and infuse for 20 minutes. Remove the empty pod and strain if you prefer.

Place the jug in a cold-water or ice bath to cool quickly, then refrigerate until cold, about 1 hour. Refrigerate within 2 hours of heating. Start the matcha only when the milk is chilled.
Sift the matcha into a bowl. Add the warm water in two additions, whisking briskly until smooth. Avoid boiling water, which can give a harsher result.
Divide the ice and cold vanilla milk between two glasses. Pour the whisked matcha over the milk. Stir gently before drinking. Serve immediately; the layers naturally mix and settle over time.
You can trial a plant drink suitable for heating. Its flavour, sweetness and stability may differ, so adjust only after tasting the finished drink.
No. This draft infuses a whole pod into the milk. TSARA’s current Madagascar export focus is vanilla raw materials rather than a finished syrup or liquid extract.
For your next batch
For café trials, record milk volume, matcha weight, actual vanilla seed weight, sweetness and ice. Develop each dairy or plant-based version separately before changing your service recipe.
